On a well floured surface, roll out the pastry to 1/4 cm thickness and cut out about 20 x 18cm circles.<br />

Take a large teaspoon of the filling and place in the middle of each pastry circle. Fold the circle in half<br />

making a half moon shape. Pinch the edges together firmly so none of the juices can escape when<br />

cooking. The idea is to get the Momo to sit up, so that the pinched edge will be uppermost. Squash the<br />

Momo down onto it’s base so that it looks like a min pasty. Pinch the edges to look like a three cornered<br />

hat.<br />

Heat the oil for deep frying and fry until golden. You can also bake them until crisp.<br />

Serve piping hot and dipped in the Shamdur sauce.<br />

2 tbsp fresh thyme, de-stemmed<br />

salt and freshly ground black pepper<br />
