Marinated Portabella Mushrooms<br />

Marinade:<br />

5 tbsp toasted sesame oil<br />

3 tbsp vinegar (rice or wine)<br />

2 tbsp tamari<br />

2 tbsp lemon juice<br />

2 garlic cloves, minced<br />

To Grill:<br />

4-5 portabella mushrooms (remove stems and wipe mushrooms clean with a paper or cloth towel)<br />

1 bunch of watercress (large)<br />

Method<br />

For the marinade: mix the ingredients in a bowl. To marinate, submerge 1 mushroom for just a few<br />

seconds. Remove, the shake to remove extra liquid (repeat for each mushroom).<br />

To grill: place mushrooms on a medium to hot grill. Cook 6 minutes and flip using tongs, for another 5<br />

minutes or until soft. While mushrooms are grilling, brush with the leftover marinade.<br />

When fully cooked, place mushrooms on a cutting board. Slice into strips. Place watercress on each<br />

plate and splash with vinegar. Add salt and pepper. Add mushroom strips. Use grilled mushrooms to<br />

make an excellent sandwich with hot sauce.<br />

Grilled Portabella Mushrooms with Herb Baguette<br />

1 1/2 lbs portabella mushrooms (whole)<br />

2 tsp cumin, ground<br />

2 tsp chilli powder<br />

1 tsp cinnamon (ground)<br />

1 tbsp sugar (or sweetener)<br />
