Method<br />

Cook pasta according to the package instructions. While pasta is cooking, sauté the onion and garlic in<br />

the olive oil for 1-2 minutes. Add the diced tofu and sauté for 2 minutes. Add the artichokes, tomatoes<br />

and tomato sauce and simmer. Drain the pasta and mix in the sauce.<br />

Hot and Spice Lo Mein<br />

1 single serving package ramen noodles<br />

1/2 cup kim chee with liquid, chopped<br />

1/4 lb firm tofu, cubed<br />

1 stalk (including white bulb) green onion, chopped<br />

Method<br />

Cook the noodles in boiling water as directed on the label. Chop the kim chee. When the noodles are<br />

soft, pour into a serving bowl. Stir in the chopped kim chee with the liquid and cubed tofu. Sprinkle with<br />

chopped green onion and serve.<br />

1/4 cup apple or papaya juice<br />

3 tbsp grated onion<br />

3 cloves garlic, minced<br />

2 tbsp soy sauce<br />

2 tbsp chillies, minced (the spicier the better)<br />

2 tbsp vinegar<br />

1 tbsp oil<br />
