2 tbsp olive oil<br />

2 tbsp chopped garlic<br />

2 medium onions diced<br />

2 fresh cherry peppers minced<br />

1 (19oz) can large red kidney beans, drained<br />

1 tbsp liquid smoke<br />

1/2 tsp black pepper<br />

1/2 tsp salt<br />

1/2 tsp ground cumin<br />

1 yellow bell pepper cord and cut into strips<br />

1 ripe beefsteak tomato, pureed<br />

1 tbsp dark molasses<br />

1 (12oz) bottle of dark beer<br />

eight to ten 10-inch flour tortillas<br />

Method<br />

Heat the olive oil in a large sauté pan over high heat. add the garlic, onions and cherry peppers, stir to<br />

coat with oil and sauté for 3-5 minutes or until the onions are golden brown. Add the beans liquid smoke,<br />

black pepper, salt and cumin. Reduce the heat to medium, stir well and simmer for 10 minutes or until the<br />

liquid is absorbed.<br />

Add the bell pepper and tomato puree stir well and simmer for 8 to 10 minutes or until the liquid is<br />

absorbed. Reduce the heat to low add the molasses and beer and simmer for 8-10 minutes or until the<br />

sauce is reduced to a thick and creamy consistency.<br />

Put tortilla on a plate. Place several tbsp of filling on the tortilla, but some salsa on top, roll up and serve<br />
