Pears with Mustard Cream Dressing<br />

2 tsp Dijon mustard<br />

250ml/8floz soya cream<br />

1 tbsp tarragon vinegar<br />

salt and freshly ground black pepper<br />

3 large ripe dessert pears, preferably Comice<br />

2 tbsp lemon juice<br />

12 lettuce leaves<br />

mild paprika<br />

6 sprigs of fresh tarragon, optional, to garnish<br />

First, make the tarragon cream. Put the mustard into a bowl then gradually add the soya cream, stirring<br />

all the time. Add the vinegar and stir gently in one direction until the mixture has thickened. Season with a<br />

little salt and pepper then cover and chill until needed.<br />

Just before serving the meal, halve and peel the pears and carefully remove the cores. Brush the pears all<br />

over with lemon juice. Put two lettuce leaves on each plate and place a pear, core-side down, on top.<br />

Spoon some of the tarragon cream over each of the pears, then sprinkle a little paprika over them and<br />

garnish each with a sprig of tarragon, if using. Serve at once.<br />
