2oz (60ml) vegetable oil<br />

6oz (170g) treacle<br />

3oz (85g) vegan margarine<br />

1/2 lb (225g) wholemeal flour<br />

3oz (85g) Barbados sugar<br />

1/2 oz (15g) cake spice, ginger and nutmeg, mixed<br />

4oz (115g) rolled oats<br />

Warm treacle in a heavy based saucepan.<br />

Rub margarine into flour, add sugar, spice and oats. Add this to the warmed treacle and mix thoroughly.<br />

Press into a greased, flat shallow tin.<br />

Bake for 15 minutes at 350F/180C. When cooked, cut into strips and leave to cool.<br />

Soya Fritters<br />

3 heaped tbsp soya flour<br />

3 heaped tbsp wholemeal flour<br />

3 heaped tbsp plain flour<br />

1 tsp sage<br />

1 tsp yeast extract<br />

1/4 tsp sea salt<br />

cold water to make a fairly thick batter<br />

Beat all ingredients together thoroughly then allow to stand for 30 minutes. Beat again and fry quickly by<br />

the spoonful in very hot oil.<br />

Pease Pudding Fritters<br />

1 large can pease pudding<br />

2oz (55g) fine wholemeal breadcrumbs<br />
