1/3 cup shallots, chopped<br />

2 tbsp red wine vinegar<br />

2 tbsp olive oil<br />

2 tbsp Dijon mustard<br />

2 tbsp mellow white miso<br />

1 tbsp vegetarian Worcestershire sauce<br />

2 tsp lemon pepper<br />

1/4 cup soy parmesan cheeze<br />

Place tofu in a food processor and blend. Add garlic and process. Add 1/2 cup of the soymilk and the<br />

shallots, scallions, vinegar, oil and mustard. Pulse to mix. Place miso in a small bowl and blend with the<br />

reserved 1/4 cup soymilk. Add to the tofu mixture along with the remaining ingredients. Put dressing in<br />

covered jar and place in the refrigerator for at least an hour, but preferably overnight.<br />

1 medium shallot, peeled and quartered<br />

1/2 cup soymilk<br />

1/2 tsp sea salt<br />

8oz package multicoloured pasta twists (or any corkscrew shaped pasta)<br />

1 tsp dried thyme<br />

1 cup chopped red onion<br />

1 cup frozen peas, cooked<br />
