100g shitake mushrooms finely chopped<br />

Shamdur Sauce<br />

2 garlic cloves, crushed<br />

2 tbsp shoyu<br />

1 tbsp sweet chilli sauce<br />

1 tsp tomato puree<br />

Mix the garlic, shoyu, sweet chilli sauce and tomato puree together<br />

Pastry<br />

First make the pastry. Mix the flours together, then add the bicarbonate of soda, making sure there are<br />

no lumps. Mix well and then slowly add cold water, a little at a time. Use your hands to form a soft<br />

dough and set aside.<br />

Drain the liquid from the tofu and cut into little cubes.<br />

Marinade<br />

For the marinade, mix together the shoyu, chilli sauce and apple juice concentrate and add the squeezed<br />

juice from the grated ginger. Add the tofu and leave to marinate for 30 minutes<br />

Lightly stir fry the spring onions, chilli and garlic in the sunflower oil. Add the spices and the mushrooms<br />

and stir fry for a couple of minutes. Add the tofu and all the marinade and stir fry for a few more minutes<br />

until the mixture has absorbed most of the liquid. Season to taste.<br />
