450g / 1lb leeks<br />

110g/ 4oz carrots<br />

1 tbsp vegetable oil<br />

1/2 tsp yellow mustard seeds<br />

1/2 medium onion, finely chopped<br />

2.5cm / 1inch piece of fresh root ginger, peeled and grated<br />

1-2 green chillies, deseeded and sliced<br />

6 cardamom pods, crushed<br />

190ml / 1/3 pint coconut cream<br />

salt and freshly ground pepper to taste<br />

Trim the leeks and cut them in half lengthwise, wash thoroughly and cut into 2.5cm / 1 inch pieces, then<br />

cut into ribbons on the slicing blade of a grater.<br />

Heat oil in a saute pan. Add the mustard seeds and fry until they begin to pop. Lower the heat, add the<br />

onion and fry gently until soft and transparent. Stir in the ginger, chilli and the cardamom pods and fry for<br />

a further 2 minutes.<br />

Add the leeks, carrots and creamed coconut to the pan. Season with salt and pepper. Simmer for 10-15<br />

minutes until leeks are tender and the coconut has reduced and thickened. Remove cardamom pods<br />

before serving.<br />
