Ingredients<br />

1/3 cup cooked rice<br />

3-4 small summer squash sliced<br />

2-3 medium onions sliced<br />

1 bell pepper sliced<br />

3-4 medium tomatoes sectioned<br />

salt and pepper to taste<br />

2 tbsp margarine thinly sliced<br />

Method<br />

In greased 1 ½ quart casserole, arrange the vegetables in layers (layer squash – layer onion…etc) In<br />

between layers, make 2 layers of rice. Be sure not to have rice on the top or bottom of casserole.<br />

Preferably have tomato layer on top. Salt and pepper to taste. Place margarine slices on top. Bake<br />

uncovered at 325F for 1 ½ hours.<br />

Southern Fried Okra<br />

2 pounds okra<br />

1 cup plain corn meal<br />

1 cup flour<br />

1 ½ quarts vegetable oil for deep frying<br />

method<br />

wash okra and cut into fairly thin slices; do not use stem or tip. Make sure okra is moist with water and<br />

place in large plastic container with lid. Add meal and flour. Place lid on container and shake several<br />

times. Remove lid and make sure all okra slices are coated with meal-flour mixture. Fry coated okra<br />

slices in deep vegetable oil until brown. Remove with slotted spoon and drain on paper towel. Salt to<br />

taste while hot.<br />

8-10 yellow squash chopped<br />

1 onion finely chopped<br />

salt and pepper<br />
