Clean and dice 6oz (170g) carrots. Cook over a low heat in a little vegetable oil until tender. Then add a<br />

pinch of salt and 1 tbsp chopped mint (or rather less if dried mint is used). Drain a small tin of sweetcorn<br />

(retain liquid) and a large tin of pease pudding. Mix and form all ingredients into a loaf, brush with oil and<br />

bake for 45 minutes at 375F/190C. Garnish with fried onion rings and serve with a green vegetable<br />

sauce. To make the sauce, add sufficient water to sweetcorn liquid to make 1/2 pint and bring to the boil.<br />

Mix one tbsp wholemeal flour and soya flour with a little cold water. Add boiling liquid and 1 tsp yeast<br />

extract, stir, return to pan and stir until it boils. Pour over the loaf before serving.<br />

Super Simple Shepherds Pie<br />

2 1/2 oz (70g) tvp mince<br />

1 large onion, diced<br />

2 tbsp vegetable oil<br />

1/2 oz (15g) wholemeal flour<br />

1 tsp yeast extract<br />

1/4 pint (140ml) vegetable stock<br />

1 tbsp tomato ketchup<br />

1lb (455g) potatoes, cooked and mashed<br />

Soak the mince in water for 10 minutes.<br />

Meanwhile, gently fry the onions in oil for 3 minutes. Add the flour to the onions and cook for a further<br />

few minutes.<br />

Add the yeast extract and some of the stock and stir until the mixture thickens. Stir in the ketchup and<br />
