<strong>Vegan</strong> Parmesan (aka Parmazano)<br />

1 cup nutritional yeast flakes<br />

1/2 cup raw almonds blanched and patted dry*<br />

1/2 tsp salt<br />

Place all ingredients in a food processor and process for several minutes until the almonds are very finely<br />

ground. Store in a tightly sealed container in the refrigerator. Use as you would Parmesan.<br />

*To blanch almonds, place them in enough water to completely cover. Bring to a boil and simmer for<br />

1-2 minutes. Drain and allow to cool or rinse under cold tap water for rapid cooling. Pinch between<br />

thumb and forefinger at the base of each almond. Skins will slip off easily.<br />

Garbanzo Havarti<br />

1 cup water<br />

1 1/2 cup cooked garbanzo beans, drained (canned is fine)<br />

1/2 cup raw cashew pieces<br />

1/3 cup nutritional yeast flakes<br />

2 tsp onion granules<br />

1 tsp salt<br />

1/2 tsp garlic granules<br />

1/2 tsp ground dill seed<br />

1/2 tsp celery seed<br />

1/4 cup lemon juice<br />

Place all ingredients in a blender and process until smooth.<br />

Pour into a saucepan and cook over a medium stirring almost constantly, until very thick (about 15-20<br />

minutes).<br />

Remove from the heat and pack and 2-cup mold or other small container. Cool, cover and chill for<br />

several hours or overnight.<br />

Use this cheeze spread in sandwiches or on crackers.<br />
