chop the onion and garlic finely. Heat the oil and sauté them for 3-4 minutes. chop the mushrooms and<br />

celery and add them to the pan. Continue cooking for a few minutes longer, stirring frequently.<br />

Add the tomatoes, dried mix and stock or water. Bring to the boil, then lower the heat and simmer,<br />

uncovered, for 15-20 minutes.<br />
