in a large saucepan, bring 450ml/16oz of water to the boil. Add the potato and a little salt an cook over<br />

a medium heat for 10 minutes. add the pumpkin and green chillies. Cover and cook for 10 minutes until<br />

all the vegetables are tender.<br />

Lower the heat under the pan and add the coconut milk, stirring gently. Add the beans and curry leaves,<br />

mix well and allow the beans to heat through. Serve warm.<br />

Chana Masala<br />

600g / 1lb 5oz canned chickpeas drained and rinsed<br />

3 tbsp oil<br />

1 onion, sliced<br />

2 tomatoes, finely chopped<br />

2.5cm / 1inch cube fresh ginger peeled and cut into strips<br />

2 tsp ground coriander<br />

1 tsp turmeric<br />

½ tsp chili powder<br />

2 tbsp chopped coriander leaves<br />

Heat the oil in a large saucepan, then add the onion and cook for 5-7 minutes until browned. Stir in the<br />

chopped tomatoes, then the ginger, ground coriander, turmeric and chili powder and cook for 5 minutes<br />

over a low heat.<br />

Add chickpeas, cover and cook for 15 minutes, stirring occasionally. Garnish with the chopped<br />

coriander leaves and serve hot with rice or flat breads.<br />
