4 tbsp olive oil<br />

2 medium onions, chopped<br />

4 cloves garlic, finely chopped<br />

1/2 cup finely chopped cilantro<br />

1 cup lentils, soaked overnight and drained<br />

3 cups cooked chickpeas<br />

4 medium tomatoes, chopped<br />

1 tsp cumin<br />

1/2 tsp thyme<br />

3 cups water<br />

1/4 cup chopped green olives<br />

2 tbsp lemon juice<br />

Heat oil in a saucepan and sauté onions, garlic and cilantro for 5 minutes. Stir in remaining ingredients,<br />

except olives and lemon juice, and bring to boil. Cover and cook over medium heat for 40 minutes or<br />

until lentils are well cooked, adding more water if necessary. Stir in olives and lemon juice and simmer for<br />

another 5 minutes and serve.<br />
