1/2 – 1 cup tomato sauce<br />

Method<br />

Heat oil in a skillet over medium heat. Add onions and garlic and lower heat. Cook until lightly browned,<br />

several minutes. Add carrots, beans, tomatoes and mushrooms and cook an additional 4-5 minutes,<br />

stirring occasionally. Turn off heat. Mash slightly in pan, until beans are half crushed.<br />

Place skillet mixture in large bowl with remaining ingredients and mix thoroughly. If mixture is too moist,<br />

add more breadcrumbs.<br />

Form into 12-15 patties and cook over medium heat in oiled skillet, about 4 minutes on each side or<br />

until heated through and slightly crispy on the outside. (Patties can also be baked on a cookie sheet for<br />

25 minutes at 350F). Serve on a bun.<br />

Macaroni and ‘Cheese’<br />

4 cups elbow macaroni<br />

1/2 cup olive oil<br />

1/2 cup whole wheat flour<br />

4 cups boiling water<br />

1 tsp sea salt<br />

1 1/2 tsp garlic powder<br />

a dash of turmeric<br />

2 tbsp tamari<br />

1 cup nutritional yeast<br />

a sprinkle of paprika<br />

Method<br />

Cook the past in plenty of boiling water and drain.<br />

In a pot, heat the olive oil and whisk in flour. Whip in the boiling water, sea salt, garlic powder and<br />

turmeric. Then whip in the yeast (large flakes are best).<br />

Mix most of the topping with the macaroni in a bowl. Place the mixture in a casserole and top with the<br />

remaining creamy sauce. Sprinkle with paprika. Bake at 15 minutes at 350F in a pre-heated oven. Broil<br />

2 minutes to brown the top after baking.<br />
