Method<br />

Sauté mushrooms with a little water, nutritional yeast and garlic powder.<br />

Sauté the onion. When soft, set aside.<br />

In a bowl, mash 3/4 lb of the tofu. Add sea salt, pepper and yeast. Then add the mushrooms.<br />

In a food processor, using the S shaped blade, blend remaining 1 lb of tofu with 1 tbsp oil, the onion<br />

sauté and a squirt of tamari or Bragg’s Aminos. Add the blended tofu mixture to the tofu mushroom mix<br />

and stir them together.<br />

Bake in a small, round oiled cake pan at 350F for 30 minutes or until the top turns golden brown.<br />

Zucchini Fritatta<br />

1 onion diced<br />

3 zucchini (medium-sized) diced<br />

2 1/4 lbs tofu (soft) diced<br />

1/2 tsp curry powder<br />

1 tsp garlic powder<br />

1 tbsp spike seasoning<br />

1 tbsp onion powder<br />

1/2 tbsp ener-G egg replacer<br />

3 tbsp Bragg’s Liquid Aminos (or soy sauce)<br />

2 tbsp oil<br />

2 tbsp nutritional yeast<br />

1 tsp turmeric<br />

1 tsp black pepper<br />

2 tbsp spike seasoning<br />

3 tbsp pastry flour<br />
