1 (14oz) can diced tomatoes<br />

2 tbsp olive oil<br />

2 cups chopped yellow onions<br />

1 cup minced celery<br />

1 cup minced green bell pepper<br />

8oz can whole tomatoes<br />

6 cups tomato/vegetable juice cocktail<br />

2 tbsp hot sauce<br />

grated zest of 2 limes<br />

2 tbsp vegetarian Worcestershire sauce<br />

salt and pepper to taste<br />

vodka (optional)<br />

grilled corn kernels<br />

guacamole<br />

Heat the olive oil in a heavy stockpot. Add the onions, celery and bell pepper and cover. Cook, stirring<br />

occasionally until the onions are soft. Add the tomatoes, vegetable juice, hot sauce, and lime zest and<br />

bring to the boil. Reduce heat and simmer for 15 minutes. Let cool slightly, then puree the soup in<br />

batches in a blender. Return to simmer for 10 more minutes. add the lime juice, Worcestershire sauce,<br />

salt and pepper and if desired, a half shot of vodka. Stir well.<br />

Pour the soup into individual bowls and garnish with corn kernels and a dollop of guacamole.<br />
