2 onions<br />

3 cloves garlic<br />

3 tbsp extra virgin olive oil<br />

850ml / 3 3/4 cups vegetable stock or water<br />

2 tins (14oz or 435g each) haricot (navy) beans<br />

16 black olives<br />

juice of 1 small lemon<br />

as required sea salt<br />

as required freshly ground black pepper<br />

Chop the onions finely and crush the garlic. sauté them in the oil for a few minutes until they start to go<br />

brown.<br />

Add the stock and beans. Chop the olives and add them to the pan. Bring to the boil, then lower the<br />

heat and simmer, uncovered, for a few minutes.<br />

Add the lemon juice and season to taste. (taste before adding the salt as olives can be salty enough for<br />

this soup to require no more). Serve piping hot.<br />

Curried Butter Bean Salad<br />

2 cans (14oz / 400g) cooked butter beans<br />

140ml / 2/3 cup vegan mayonnaise<br />

1 heaped tbsp mango chutney<br />

1 heaped tbsp desiccated coconut<br />

2 heaped tsp curry powder<br />

Drain the beans.<br />

Combine the mayonnaise, chutney, curry powder and coconut. Add the beans, mix and serve.<br />

455 – 570g / 1 1/2 lbs vegan sausages<br />
