Kaji Tubu Bokum (eggplant tofu)<br />

1 Japanese eggplant<br />

1 tbsp vegetable oil<br />

1 lb fresh tofu cut into bite size cubes<br />

1 green chili pepper, seeded and thinly sliced<br />

4 green onions cut into 1inch pieces<br />

2 cloves garlic, minced<br />

2 tbsp soy sauce<br />

1 tsp rice vinegar<br />

1 tsp toasted sesame seeds<br />

Parboil or steam the eggplant for 5 minutes. Drain and cool. Cut the eggplant into 1-inch cubes.<br />

In a wok or large skillet, heat the oil over high heat. Add the eggplant, tofu, chili pepper, onions and<br />

garlic. Stir fry 2 minutes.<br />

Mix together the soy sauce and rice vinegar. Pour over the vegetables and cook until the moisture is<br />

absorbed, about 1 minute.<br />

Transfer to a serving platter and sprinkle with the sesame seeds before serving.<br />

Ginger marinade<br />

1 tsp grated fresh ginger root<br />

3 tbsp soy sauce<br />

1 tsp rice vinegar<br />

1 lb firm tofu, drained and cubed<br />

1 tbsp sesame tempura oil (or vegetable oil plus 2-3 drops sesame chili oil)<br />
