225g / 2 cups whole-wheat flour<br />

3 tbsp margarine<br />

425ml/2 cups soya yoghurt<br />

Put all the dry ingredients in a bowl and mix them well.<br />

Melt margarine. Add it to the dry ingredients along with the soya yoghurt. Stir the mixture until it is a<br />

smooth batter.<br />

Pour the mixture into greased muffin tins and bake at 425F/225C for 15-20 minutes.<br />

Crepes<br />

170g/ 1 1/2 cups whole-wheat flour<br />

3 tbsp soya flour<br />

1 tsp baking powder<br />

2 tsp vegetable oil<br />

1 tsp sea salt<br />

as required water<br />

Combine the flours, baking powder and sea salt. Make a well in the centre, pour in the oil, then pour in<br />

the water gradually, stirring constantly with a fork. The consistency should be like thick cream. Leave to<br />

stand for about half an hour. If it’s too thick then add more water, if it’s too thin, add more flour.<br />

Melt some margarine or vegetable oil and fry crepes on both sides.<br />
