Mushroom Pie<br />

4oz(115g) onions, chopped<br />

2 tbsp vegetable oil for frying<br />

2 medium tomatoes<br />

1 tsp basil or marjoram<br />

4oz (115g) field mushrooms, sliced<br />

4oz (115g) cooked brown rice or wheat<br />

a little finely chopped celery (optional)<br />

1 tsp soya flour<br />

salt and pepper to taste<br />

for the topping:<br />

about 10oz (285g) potatoes, cooked and mashed with 1oz (30g) vegan margarine<br />

Fry the onions in oil until lightly browned, then add tomatoes, herbs, mushrooms, rice and celery.<br />

Mix the soya flour with 1 tbsp of cold water and stir into the mixture. Add seasoning then cover and<br />

cook gently for 5 minutes: turn into a baking dish, cover with the mashed potato and brown under the<br />

grill.<br />

Serve alone or with a brown gravy and green vegetables.<br />

2oz (55g) TVP mince<br />
