Strawberry Spinach Salad<br />

4 large strawberries<br />

120ml vegetable oil<br />

30ml white wine vinegar<br />

1 tbsp each fresh chopped basil and chives<br />

1 tsp rice syrup or honey substitute<br />

1/4 tsp fresh mustard<br />

add salt and pepper to taste<br />

blend together the above ingredients and drizzle over fresh spinach, sliced strawberries and lettuce.<br />

Sprinkle with pine nuts.<br />

Coconut Lime Rice<br />

To begin, bring a litre of water and 200ml coconut cream (not coconut milk) to a boil. Add 500ml long<br />

grain rice and the juice of and zest of 3 limes.<br />

Stir, bring to a boil, put a lid on and simmer until rice is tender.<br />

You can think about adding chillies, or peas or whatever you fancy.<br />

Refried Beans<br />

(for four people)<br />

sort one mug of pinto beans to remove any small stones then rinse under running water. Place in a large<br />

saucepan and cover with water and leave to soak overnight or for 10 hours. Drain off the water. Return<br />

to saucepan cover with cold water and bring to a boil. Reduce the heat, partially cover the pan and<br />

simmer for 2 hours or more topping up the water and stirring every 20 minutes. check that the beans are<br />

tender and drain, reserving the water to use later. Stir in a tsp of salt and a tblsp of vegetable oil. Then<br />

mash the beans using your cooking water to thin the mixture. The mashed beans can also be used as a<br />

base for bean soup.<br />
