1/2 cup of soy parmesan<br />

1 lb regular tofu, drained and well mashed<br />

2/3 cup vegan mayonnaise<br />

1 1/2 tbsp fresh parsley, minced, or 2 tsp dried parsley leaves<br />

2 tsp dried basil leaves<br />

2 tsp onion granules<br />

1 tsp garlic granules<br />

1/2 tsp salt, or to taste<br />

Method<br />

Preheat oven to 350F.<br />

In a mixing bowl, combine the tofu, mayonnaise, herbs and seasonings for the fillng and mash them into a<br />

finely grained paste. Stuff about 2 rounded tbsp of filling into each shell.<br />

Spread a cup or so of the pasta sauce over the bottom of a 9x13x2 inch baking dish. Arrange the<br />

stuffed shells in a single layer over the sauce. Spoon the remaining sauce over the shells and sprinkle with<br />

soy parmesan. Bake for 30-45 minutes or until heated through.<br />

Swiss Fondue<br />

3 cups water<br />

1/2 cup nutritional yeast flakes<br />

1/3 cup quick cooking rolled oats<br />

1/4 cup fresh lemon juice<br />

1/4 cup tahini<br />

4 tbsp arrowroot or cornstarch/cornflour<br />

1 tsp salt<br />

1/2 tsp mustard powder<br />

Method<br />

Place all ingredients in a blender and process several minutes until the oats are finely ground and the<br />

sauce is completely smooth. Pour into a saucepan and bring to a boil, stirring constantly. Reduce the heat<br />
