Grate the cabbage coarsely. Chop the celery and green pepper. Chop the onion and olives finely.<br />

Combine all the ingredients in a large bowl and mix thoroughly.<br />

Hijiki Tofu Balls<br />

55g/2oz hijiki<br />

565g/ 2 1/2 cups tofu<br />

4 tbsp soy sauce<br />

1-2 (about 115g/4oz) carrots<br />

as required sesame seeds<br />

as required oil for deep frying<br />

Rinse hijiki well by covering with water and draining two or three times. Soak it in enough water to<br />

cover for about 20 minutes.<br />

Bring the water to the boil, lower the heat and simmer the hijiki for about 20 minutes. add 2 tbsp soy<br />

sauce and simmer for a further 15-20 minutes. drain and cool.<br />

Drain the tofu, put into a large bowl and mash thoroughly. Grate the carrot. Chop the hijiki finely. Add<br />

the carrot and hijiki to the tofu along with the remaining soy sauce. Knead mixture with hands then form<br />

into balls about the size of a golf ball.<br />

Spread sesame seeds on to a plate and roll each ball in them so they are coated with seeds.<br />

Deep fry the balls until lightly browned<br />

Cauliflower Sandwich Spread<br />

1 medium cauliflower<br />

4 spring onions (scallions)<br />

2 tbsp mined parsley<br />

4-5 tbsp vegan mayonnaise<br />

Wash and break up the cauliflower into small florets. Steam in a small amount of water until just tender<br />

(only a few minutes).<br />

Mash the cauliflower coarsely or chop it finely. Allow to cool.<br />

Chop the scallions finely.<br />
