Method<br />

Cook the Quinoa. When finished, place in a large mixing bowl.<br />

In a small fry pan, sauté the diced onion until softened.<br />

In a food processor, blend the remaining ingredients with the 1/4 cup of water, adding the sautéed<br />

onions. Combine mixture with Quinoa in bowl. Mix well.<br />

Form into 18 burgers and place on an oiled baking sheet. Bake in a pre-heated oven at 350F until crispy<br />

on the top side (25-30 minutes). Flip and continue to bake until the outside of the burgers are crispy<br />

(about 15 more minutes).<br />

Sweet Potato and Black Bean Burgers<br />

2 tbsp oil<br />

2 onions, diced<br />

4 garlic cloves, minced<br />

2 carrots grated finely<br />

2 cups black beans, cooked<br />

10 sun dried tomatoes (soaked in hot water until soft) coarsely chopped<br />

2 cups shitake mushrooms (dried), soaked in hot water until soft, coarsely chopped<br />

2 baked sweet potatoes (scooped out of skin)<br />

2 cups Quinoa (cooked)<br />

1 1/2 cup home made breadcrumbs or wheat germ or bran<br />

2 tbsp caraway seeds<br />

1 tsp sea salt<br />

1 tsp onion powder<br />

1 tsp red pepper flakes<br />
