1 green chilli finely chopped<br />

1 clove garlic chopped<br />

½ tsp garam masala<br />

250g / 8oz masoor dhal (or lentils)<br />

juice of 1 lemon<br />

method<br />

heat the oil in a pan, add the cloves, cardamom and cinnamon and fry until they start to swell. Add the<br />

onion and fry until translucent. Add ginger, chilli, garlic and garam masala and cook for about 5 minutes.<br />

Add lentils, stir thoroughly and fry for 1 minute. Add salt to taste and enough water to come about<br />

3cm/1 ¼ inches above the level of the lentils. Bring to the boil, cover and simmer for about 20 minutes,<br />

until really thick and tender.<br />

Sprinkle with the lemon juice, stir and serve immediately.<br />

Courgette, Peas and Coriander<br />

Ingredients<br />

4 tbsp oil<br />

2 onions sliced<br />

2 green chillies chopped<br />

2.5cm (1 inch) piece ginger chopped<br />

4 tbsp finely chopped coriander<br />

salt<br />

500g (1 lb) courgettes cut into 5mm (1/4 inch) slices<br />

250g (8oz) shelled peas<br />

method<br />

heat oil in a pan, add the onion and fry until soft. Add the garlic, chillies, ginger, coriander and salt to<br />

taste and cook for 5 minutes, stirring occasionally. Add the courgettes and peas, stir well, cover and<br />

cook for 30 minutes, or until the peas are tender. If necessary, boil quickly to evaporate any liquid before<br />

serving.<br />
