Method<br />

Preheat the oven to 350F, grease a 1.5 quart baking dish. Put had the potatoes in the baking dish.<br />

Cover with half the apples, sprinkle with half the sugar, dot with half the butter and sprinkle with salt.<br />

Repeat layers. Cover and bake for 30 minutes. Uncover and bake about 30 minutes more or until apples<br />

are soft.<br />

Braised Herb Tomatoes<br />

4 tbsp margarine<br />

4 scallions, chopped<br />

1 tbsp finely chopped parsley<br />

4 tsp chopped fresh basil or 2 tsp dried, crumbled<br />

2 tsp chopped fresh thyme or 1 tsp dried, crumbled<br />

8 medium tomatoes peeled<br />

salt & pepper<br />

Method<br />

Melt the margarine in a skillet, stir in the scallions, parsley, basil and thyme. Cook over a low heat,<br />

stirring often, for 5 minutes. Add the tomatoes, cover and cook over a low heat for 5 more minutes.<br />

Season to taste with salt and pepper. Place the tomatoes on a platter and spoon the herb juices over<br />

them.<br />
