1 12oz bottle of beer<br />

1/2 cup apple juice or apple cider<br />

2 tbsp whole grain mustard<br />

3 tbsp umeboshi vinegar (or 2 tbsp soy sauce and 1 tbsp rice vinegar)<br />

salt and pepper<br />

Slice the cabbage very thin.<br />

Warm the oil in a medium saucepan over medium heat. Add the onions and sauté for 7 minutes or until<br />

the onions are softened.<br />

Add the caraway and cook for 2-3 minutes more. Add the cabbage, beer and apple juice, cover and<br />

bring to a boil.<br />

Reduce the heat to a simmer, and cook for 5 minutes, covered. Uncover and simmer, stirring<br />

occasionally, for 15 more minutes, or until the cabbage is tender and the braising liquid has reduced by<br />

half.<br />

Add the mustard, umeboshi vinegar, salt and pepper. Cook for 5 minutes more, stirring occasionally.<br />

Serve hot.<br />

Sweet and Hot Sesame Nori Strips<br />

1/4 cup brown rice syrup<br />

1/4 cup oil<br />

pinch of cayenne pepper<br />

1/2 cup sesame seeds<br />

3 nori sheets<br />

salt<br />

Preheat oven to 350F<br />

Whisk together the rice syrup and oil in a small bowl then stir in the cayenne.<br />

Place the sesame seeds in a small bowl, with water to cover. Swish to rinse and pour off any floaters.<br />

Drain the seeds in a strainer, then transfer to a dry skillet and toast until fragrant.<br />

Tear each nori sheet into three strips. Use a pastry brush to paint each strip with a thick coat of the<br />

syrup mixture. Sprinkle liberally with toasted sesame seeds and sprinkle liberally with salt.<br />
