1 large tomato<br />

1/2 pint (285ml) vegetable stock or water<br />

1 tsp yeast extract<br />

1 tsp soya flour mixed with 1 heaped tsp flaked millet<br />

a good handful of fresh parsley, chopped<br />

Chop and fry the vegetables in a little oil for 5 minutes.<br />

Place the vegetables and rice in a casserole dish. Top with slices of tomato.<br />

Pour over the water or stock in which the yesast extract has been dissolved. Sprinkle over millet/soya<br />

flour mix and crisp under the grill until topping is slightly browned.<br />

6oz (170g) black eyed beans (dried)<br />

1 large onion (chopped)<br />

2 tbsp vegetable oil<br />

3 medium tomatoes (skinned)<br />

2 sticks celery (sliced)<br />

1 small green pepper (deseeded and chopped)<br />

salt and pepper to taste<br />

1 tbsp chopped fresh parsley or 1 tsp other dried herbs<br />

Leftover mashed potatoes<br />

Cook beans in double the quantity of water for about 30 minutes.<br />

Fry the onion in the oil for a few minutes then add the tomatoes, celery and pepper. Cook together for<br />

about 5 minutes.<br />

Place layer of beans and vegetables in an oiled oven-proof dish adding seasoning and herbs to taste.<br />
