1 1/2 tbsp brown rice miso or barley miso<br />

1 tbsp olive oil<br />

1/2 medium onion minced<br />

2 cloves garlic, crushed and minced<br />

Combine all the ingredients in a small saucepan and simmer over low heat for 5-10 minutes.<br />

Use immediately or cover tightly and refrigerate up to two weeks<br />

Golden Squash Potage<br />

1 cup veggie sausages, sliced or sliced seitan<br />

1 medium butternut squash<br />

4 cups water<br />

1 tsp sea salt<br />

1/4 tsp allspice<br />

1 cup plain soymilk or Rice Dream beverage<br />

2-3 tbsp corn oil or sesame oil<br />

3 tbsp minced fresh parsley or 1 tbsp dried<br />

Cut the squash in half, remove the seeds and peel. Cut into 1-inch cubes.<br />
