Mix all ingredients thoroughly, form into rissoles, roll in flour and fry in vegetable oil<br />

Peach Curry<br />

1lb (455g) tinned peaches, unsweetened<br />

1 1/2 lb (680g) cooking apples, chopped<br />

1 small onion, chopped<br />

3 tbsp vegetable oil<br />

1 tsp yeast extract<br />

1 pint (570ml) hot water<br />

1 tbsp curry powder<br />

1 rounded dessertspoon wholemeal flour<br />

grated rind and juice of 1/2 lemon<br />

1oz ground almonds<br />

2 bananas, peeled and sliced<br />

1 dessertspoon coconut<br />

grapes<br />

Drain juice from tin of peaches into a saucepan. Gently simmer apples in the juice in a covered pan until<br />

almost tender.<br />

Lightly fry onion in the oil for a few minutes, do not brown.<br />

Dissolve yeast in the hot water<br />

Mix curry powder and flour together in a basin. Add one tsp flour and curry mixture to pan containing<br />

onion and stir in adding small quantity of the water. Continue to do this until you have used all the water.<br />

Then add the lemon rind and juice and almonds. Cook gently until the mixture is thick and creamy.<br />

Stir in the cooked apples, peaches and lastly the bananas. Keep stirring gently while reheating the<br />

mixture<br />
