Red Pottage<br />

1/2 lb cooked haricot beans<br />

1oz margarine<br />

1 large onion<br />

1 beetroot<br />

4 small tomatoes<br />

1 stick of celery<br />

3 pints stock<br />

Method<br />

Peel onion, beetroot and tomatoes. Roughly chop all the vegetables.<br />

Melt the margarine in a stock pot and add all ingredients. Cook gently for a few minutes.<br />

Add stock<br />

Season with salt and pepper to taste and simmer for two hours.<br />

Mrs Findley says to sieve, reheat and serve piping hot but I say just whizz it down with a hand held<br />

blender or just serve as is.<br />

Gooseberry chutney<br />

2lb green gooseberries<br />

1/4 lb onions<br />

1/4 lb sultanas<br />

1 lb demerara sugar<br />

1 tsp cayenne pepper<br />

2 tsp ground ginger<br />

2 tsp salt<br />

1-pint malt vinegar<br />
