3 medium zucchini<br />

3 tbsp olive oil<br />

2 medium onions, chopped<br />

6 cloves garlic, minced<br />

1 large ripe tomato, diced<br />

1/4 cup fresh dill, chopped<br />

1/4 cup fresh mint, chopped<br />

1/2 cup fresh parsley, chopped<br />

1/2 tsp sugar<br />

salt and pepper to taste<br />

1/4 cup water<br />

wash and dry the zucchini. Remove the stems and slice zucchini into 1/4 inch round slices.<br />

In a deep, lidded saucepan, heat oil and sauté the onion and garlic for 3 minutes.<br />

Add zucchini. Sauté for 5 minutes.<br />

Add the tomato, dill, mint, parsley, sugar, salt and pepper. Sauté for 3 minutes.<br />

Add water, reduce heat to a simmer and cook for no longer than 5 minutes. Do not overcook.<br />

Serve hot or cold. Serves 4 as a side dish.<br />
