Boil the split peas with salt until they are soft and start to break down (about half an hour). Add garlic,<br />

onions, stock cubes, black pepper and Worcestershire sauce and simmer for another 20 minutes or until<br />

the onion is cooked. If you have one, take out your handheld blender and whizz it down until smooth (not<br />

really necessary). Toss in the fake bacon and ham and let simmer for another 10 minutes. Serve with<br />

Tofu Manicotti<br />

Prepare ½ lb large manicotti noodles as per package instructions<br />

For the filling:<br />

Sauté 1 cup chopped onions in 3-4 tbsp oil and then add:<br />

1 ½ cup chopped, cooked spinach<br />

2 ½ cups mashed tofu<br />

salt and garlic to taste<br />

Stuff the noodles and place them side-by-side in a greased baking pan that has a small amount of water<br />

in the bottom. Cover with Tomato Sauce (jarred or use the following)<br />

2 cups tomato sauce<br />

1-cup water<br />

1 tsp garlic powder<br />

1 tsp oregano<br />

1 tsp basil<br />

1/8 tsp marjoram<br />

1 tsp salt<br />

1 tbsp oil<br />

2 tsp sugar<br />

simmer 20 minutes and pour over the stuffed noodles. You can pour a thin layer of nutritional yeast<br />

cheese or crumble your favourite vegan cheese over the top, but it’s not necessary.<br />

Cover the pan with aluminium foil and bake at 350F for 20 minutes.<br />
