Method<br />

Trim stems from the mushrooms and discard. Wipe the mushrooms with a cloth to remove any dirt.<br />

Brush both sides of the mushrooms liberally with half the olive oil. Grill the mushrooms preferably on a<br />

griddle pan or under a hot grill for 5-8 minutes, turning them occasionally until tender.<br />

Meanwhile cook the linguine in boiling salted water according to packet instructions until al dente. Drain,<br />

then put back in pan to keep warm. Toss in a little olive oil to prevent the pasta from sticking.<br />

Remove the mushrooms from the grill and cut them into 3mm(1/8 inch) slices. Put the mushrooms and<br />

any mushroom juices in a small bowl. Add the vinegar, remaining oil, herbs, garlic and lemon juice to the<br />

mushrooms, mix together well and season to taste.<br />

Place the mushrooms in the pan with the pasta and toss together well. Serve in warmed, large, individual<br />

bowls.<br />

Tagliatelle with Oyster Mushrooms in a Chilli Sauce<br />

500g (1lb 2oz) tagliatelle<br />

150ml (1/4 pint) olive oil<br />

2 garlic cloves crushed<br />

½ tsp red chilli oil<br />

2 courgettes sliced<br />

1 red pepper halved, deseeded and quartered<br />

2 small aubergines, sliced<br />

1 red onion, cut in thin rings<br />

6 oyster mushrooms<br />

salt and freshly ground pepper<br />

Method<br />

Mix together the olive oil, garlic, chilli oil and salt in a large bowl. Toss the vegetables (including<br />

mushrooms) in the mixture to coat them. Remove the vegetables from the oil and reserve the oil. Grill the<br />

vegetables on a medium to high heat for 5 minutes on each side until golden and tender. Return the<br />
