Method<br />

Mix the peanut butter, rice syrup, vanilla, cinnamon, 1/4 cup chopped peanuts and carob chips together<br />

in a large bowl. Add the cereal, stirring gently until it is well coated.<br />

Place a small bowl of water near your work surface. Using wet hands, form the cereal mixture into<br />

walnut sized balls and roll the balls in the shredded coconut. Place the balls in a container lined with<br />

waxed paper. Store at room temperature or in the freezer.<br />

Fudgy Cocoa Mint Cookies<br />

3 cups unbleached or whole wheat flour or 1 1/2 cups of each<br />

1/4 cup cocoa<br />

2 tsp baking soda<br />

1/4 tsp salt<br />

2 tbsp oil<br />

1 1/2 granulated sweetener<br />

2 1/2 cups finely grated zucchini (courgette)<br />

1 tsp peppermint extract<br />

1 cup chopped walnuts<br />

Method<br />

preheat the oven to 350F.<br />

Mix together the flour, cocoa, baking soda and salt in a bowl.<br />

Beat the oil, sweetener, zucchini and peppermint extract together with a mixer. Add the dry ingredients<br />

and beat until smooth. Fold in the walnuts.<br />

Drop by spoonfuls onto cookie sheets and bake for about 12 minutes.<br />
