Heat the ghee and lightly fry the onion. Grind together the turmeric, ginger, garlic and paprika to form a<br />

paste. Stir this into the fried onion with the pumpkin pieces, lemon juice and salt. Add a little water and<br />

cook over a medium heat until tender.<br />

Arbi ki kari (Yam curry)<br />

1 1/2 lbs (675g) yam<br />

vegetable ghee for frying<br />

2 onions, chopped<br />

1 inch (2.5 cm) piece ginger finely chopped<br />

2 green chillies, chopped<br />

1 tsp salt<br />

1/2 tsp paprika or chilli powder<br />

1 1/2 tsp coriander powder<br />

1/2 tsp garam masala<br />

Wash, peel and soak the yam in salted water for half an hour. Drain and cut into cubes. Deep fry till<br />

tender and drain. In a separate pan fry the onions in 2 tbsp of ghee, add the spices and fry for a few<br />

minutes. Stir in the yam and fry gently for 5 minutes. Garnish with chopped coriander leaves and serve<br />

hot with rice.<br />

2 onions, chopped<br />

2 tbsp vegetable ghee<br />

1 cup grated coconut<br />

1 tsp poppy seeds<br />

1 tsp coriander seeds<br />

1/2 tsp turmeric powder<br />

1/2 tsp paprika or chilli powder<br />
