3fl oz (90ml) vegetable oil<br />

1oz (30g) wholemeal flour<br />

1/2 pint (285ml) water<br />

salt and pepper to taste<br />

a squeeze of lemon juice<br />

make the stock according to packet instructions, heat and add the TVP to soak.<br />

In a saucepan, cook the mushrooms in oil for about 5 minutes, add the flour stirring then add the water<br />

gradually. Bring to the boil and allow to thicken, still stirring.<br />

Strain the TVP and add it to the mushrooms. Bring back to the boil and add seasoning and lemon juice.<br />

Just before serving, garnish with chopped parsley. Serve with large croutons of fried bread or broken<br />

crisp breads and green vegetables.<br />

3oz (85g) vegan margarine<br />

6oz (170g) wholemeal self-raising flour<br />

1 tbsp red jam (rasberrie, red-currant, strawberry etc)<br />

2 medium apples<br />

unrefined sugar<br />

rub margarine into the flour, mix with a little cold water and roll into an oblong shape.<br />

Spread with jam and sliced apples, sprinkle with sugar and roll, sealing ends.<br />

Place in oven dish and bake at 400F/200C until pale brown. Sprinkle with sugar.<br />
