French-Fried Onion String Beans<br />

2 (14.5oz) cans French style green beans, drained<br />

1 (2.8oz) can French-fried onions<br />

3 tbsp nutritional yeast<br />

1 tbsp vegetarian chicken style broth powder or powdered vegetable stock<br />

1 tsp garlic salt<br />

Combine all ingredients in a saucepan and stir over medium heat until well-blended and hot.<br />

Green Bean Stroganoff<br />

3 large onions, thinly sliced<br />

2 cloves garlic, minced<br />

1/3 cup dry white wine<br />

1 1/2 lbs frozen or fresh whole small green beans<br />

3/4 lb fresh mushrooms, sliced<br />

1 tbsp dried basil or three tbsp chopped fresh<br />

1 (12.3oz) pkg firm silken tofu (or 1 1/2 cups tofu)<br />

6 tbsp water<br />

1/3 cup soy sauce or tamari<br />

3 tbsp lemon juice<br />

1/4 tsp unrefined sugar or other sweetener<br />

salt and pepper to taste<br />

Heat a large heavy non-stick or lightly oiled skillet over high heat. Add the onions and garlic and steam<br />

fry with 3 tbsp of the wine until the onion starts to soften (use a little water if necessary). Add the green<br />

beans, mushrooms, basil and remaining wine. Cover and cook over medium heat for 5 minutes or until<br />

the beans are done to your liking.<br />

Meanwhile, mix the tofu, water, soy sauce, lemon juice, and sugar in a blender or food processor until<br />

very smooth. Pour this into the pan with the vegetables. Turn this into the pan with the vegetables. Turn<br />

the heat to low and heat the mixture gently. Add salt and pepper to taste. Serve hot over hot cooked<br />

linguine or fettuccini noodles.<br />
