Fried Green Tomatoes<br />

4 large green tomatoes<br />

2 cups plain corn meal<br />

1 ½ tbsp salt<br />

pinch of black pepper<br />

½ cup oil<br />

wash the tomatoes and pat dry. Cut tomatoes in ¼ inch slices. Sprinkle with salt and pepper. Dip each<br />

slice in corn meal and lay aside on waxed paper. Heat oil. Fry tomato slices until golden brown. Drain on<br />

paper towels. Serve hot.<br />

Artichoke and Rice Salad<br />

2 (7 oz) packages paella rice<br />

4 green onions thinly sliced<br />

½ green pepper seeded and chopped<br />

12 pimento stuffed olives, sliced<br />

2 (6 oz) jars marinated artichoke hearts<br />

¾ tsp curry powder<br />

1/3 cup eggless mayonnaise<br />

cook rice as directed, omitting butter. Cool in a large bowl. Add onions, pepper and olives. Drain<br />

artichoke hearts, reserving marinade and cut in half. Combine the marinade curry powder and mayo.<br />

Add the hearts to the rice and toss with the dressing. Chill.<br />

Fire and Ice<br />

2 large purple onions cut in ¼ inch slices<br />

6 large firm tomatoes peeled and quartered<br />

1 bell pepper seeded and cut into strips<br />

¾ cup cider vinegar<br />

¼ cup water<br />
