Lafayette Lima Beans<br />

1 onion minced<br />

2 tbsp oil<br />

8 cups water<br />

2 cups dry lima beans<br />

1 small bell pepper minced<br />

4 cloves garlic, minced<br />

Method<br />

In a 4 quart pot, sauté the onion for 10 minutes, stirring often. Add the remaining ingredients, bring to a<br />

boil, lower the heat to a simmer and cook for an additional 45 minutes. They should be real juicy, so if<br />

necessary, add more water or some veggie stock. Serve with corn bread.<br />

French Fried Onion Rings<br />

2 large onions, sliced into rings<br />

3 cups chickpea flour (gram flour)<br />

1 cup water<br />

1/2 tsp salt<br />

1/4 tsp paprika<br />

1/4 tsp cayenne<br />

oil for frying<br />

Method<br />

Slice the onions into 1/4 inch slices and separate into rings. Take 1 cup of the chickpea flour and<br />

sprinkle over the sliced onions. Mix the remaining ingredients adding enough water to make a fairly thick<br />

batter. Dip each onion ring into the batter and place in two inches of hot oil. Fry each side until golden.<br />

Place on a paper bag to drain. The amount of batter needed will depend on the size of the onion. Salt<br />

and pepper to taste.<br />
