Hot Garbanzo Beans with Sun Dried Tomatoes<br />

2 tbsp olive oil<br />

4 sun-dried tomatoes, thinly sliced<br />

2 garlic cloves, thinly sliced<br />

1/2 medium onion, thinly sliced<br />

1/2 to 1 dried New Mexico pepper, stemmed and crushed (or 1 tsp dried red pepper flakes (or to<br />

taste))<br />

1 (16oz) can garbanzo beans<br />

water<br />

salt and ground black pepper<br />

Heat the oil in a small sauté pan over medium heat. add the sun-dried tomatoes, garlic onion and New<br />

Mexico pepper and sauté until the onion begins to brown. Add the garbanzo beans and continue to sauté<br />

for about 5 minutes, or until the garbanzo beans begin to brown. Add enough water just to cover the<br />

garbanzo beans then stir well. Reduce the heat to low and simmer for about 5 minutes, or until the liquid<br />

is almost gone. Add salt and black pepper to taste and serve immediately.<br />

Masala Potatoes<br />

3 tbsp margarine<br />

1 tbsp black mustard seeds<br />

1 fresh long slim red cayenne pepper, stemmed<br />

1/2 tsp whole black peppercorns<br />

2 medium onions, coarsely chopped<br />

1 red bell pepper, cored and diced<br />

1 tsp turmeric<br />

1/2 tsp ground coriander<br />

1/2 tsp salt<br />

1 to 3 tsp ground cayenne pepper<br />

4 or 5 medium potatoes, unpeeled, parboiled and cut into 1 inch chunks<br />

1/4 cup of hot water<br />
