meanwhile, heat the oil in large saucepan add the onion, cover and cook gently for 10 minutes until it is<br />

breaking them up with a wooden spoon and then add the sun-dried tomatoes.<br />

Let the mixture simmer away for about 10-15 minutes until the liquid has disappeared. Then add the<br />

artichoke hearts, black olives and a good seasoning of salt and pepper.<br />

Drain the pasta and return it to the still warm saucepan with some salt. Either add the artichoke and<br />

tomato mixture to the pasta and mix or just toss the pasta in a tbsp of olive oil then serve it on warmed<br />

plates and spoon the sauce over it. Tear the basil leaves and sprinkle over the top.<br />

Simple Lentil Loaf<br />

500g / 2 1/2 cups dried red lentils<br />

600ml / 2 1/2 cups water<br />

2 tbsp olive oil<br />

2 large onions, very finely chopped<br />

1 tsp dried mixed herbs or sage<br />

1 tbsp lemon juice<br />

salt and freshly black pepper<br />

3-4 tbsp flour or dried breadcrumbs to coat<br />

a little soy oil, for greasing<br />

Wash and drain the lentils, picking out any damaged lentils or pieces of grit, then put them into a<br />

saucepan with the water, bring to the boil, then turn the heat right down, put on a lid and cook for 20-25<br />

minutes until the lentils are soft, pale coloured and all the water has been absorbed. Keep an eye on the<br />

pan toward the end of the cooking time as the lentils may stick, but they need to be dry so only add a<br />

very little extra water if any.<br />

Meanwhile, heat the oil in a large saucepan and fry the onion for 10 minutes over a fairly gentle heat with<br />

lid on the pan.<br />

Preheat the oven to 190C / 375F<br />

Mix together the lentils, fried onions, herbs, lemon juice and season to taste. Form the mixture into a loaf<br />

shape, coating it with flour or breadcrumbs.<br />
