1 small green bell pepper, chopped<br />

1 clove garlic, minced<br />

4 green onions, chopped<br />

1/2 tsp grated fresh ginger root<br />

3 tbsp soy sauce<br />

1/4 tsp black pepper<br />

1/4 cup water<br />

In a large bowl, soak the dried mushrooms in enough warm water to cover for 10 minutes; drain.<br />

Remove and discard the stems and slice the mushroom caps into 3 or 4 pieces.<br />

In a large skillet, heat the oil over medium-high heat. stir fry the tofu, mushrooms and green pepper until<br />

the tofu is golden brown, about 5 minutes.<br />

Add the garlic, onions and ginger and cook 1 minute more.<br />

Add the soy sauce, water and pepper and simmer for about 5 minutes<br />

1 tsp rice vinegar<br />
