Put water in the bottom of a greased baking dish. Put the apple halves in the dish, cut side up. Pour a<br />

tbsp of maple syrup over each half and dot with the margarine.<br />

Bake the apple halves in a 350F (180C) oven for 4-5 minutes. If possible, baste the apply halves once<br />

or twice during this time. Serve hot.<br />

Millet Chili for One<br />

1/2 cup millet<br />

3/4 cup water<br />

pinch sea salt<br />

1 small onion<br />

1 tbsp vegetable oil<br />

1 tsp cumin<br />

1 tsp oregano<br />

1/2 tsp garlic salt<br />

1/4 tsp chilli powder<br />

half a 15oz can of pinto beans<br />

1/3 cup water<br />

1 tbsp tomato paste<br />

Cover the millet with the water and a pinch of salt. Bring to the boil, then lower heat. cover and simmer<br />

for about 20 minutes, by which time the water should be absorbed and the millet tender.<br />

Meanwhile chop the oregano and sauté in the oil for about 3 minutes. Lower heat and add the cumin,<br />

oregano, garlic salt and chilli powder. Stir well for a minute or so.<br />

Drain and rinse the beans. Add them to the saucepan and stir for a minute or so longer. Add the water<br />

and the tomato puree. Raise heat, bring to the boil and then lower heat and simmer uncovered for about<br />

5 minutes.<br />

Add the cooked millet to the beans, stir well and cook for a minute or two longer.<br />

2/3 cup plus 2 tbsp coconut flavoured soymilk<br />
