1 cup chopped parsley<br />

1 green bell pepper, chopped<br />

4 – 6 cloves garlic, crushed<br />

1/4 cup chilli powder<br />

1 tsp cumin<br />

1 tsp oregano<br />

16oz can tomatoes, crushed<br />

2 7oz cans diced green chilies<br />

In a large pot, bring the rice and broth to a boil. Reduce the heat and cook for 45 minutes.<br />

Meanwhile heat the olive oil and sauté the green onions, parsley, green bell pepper, garlic, chili powder,<br />

cumin and oregano for 4-5 minutes. add the rice, tomatoes and diced green chillies. Mix well and transfer<br />

the mixture to a baking dish. Bake at 400F for 30 minutes. serve with green salad. Makes 6-8 servings.<br />

Uncle Ramsey’s Curried Rice and Raisins<br />

2 2/3 cups uncooked rice<br />

1/2 cup raisins<br />

1 tsp salt<br />

2 tbsp margarine<br />

1 tbsp curry powder<br />

2 more tbsp margarine<br />

In a large stock pot bring water to boil as directed on the rice package. Add the rice and return to a<br />

boil. Reduce the heat and add the raisins, salt and 2 tbsp margarine. Cover and cook according to<br />

package instructions. Fluff with a fork while adding the curry powder and remaining margarine. Makes<br />

12 servings.<br />
