2 cups carrot and beet (each), grated<br />

1/2 tsp oregano<br />

1/2 tsp basil<br />

1/2 tsp garlic powder<br />

2 tsp nutritional yeast<br />

1/4 cup scallion, diced<br />

1/2 tsp dill weed<br />

1/2 tsp herb seasoning<br />

1 tbsp apple cider vinegar (raw)<br />

Method<br />

Wash the zucchini. Remove the stem. Slice in half lengthwise. Scoop out the insides carefully (avoid<br />

breaking the outer shell).<br />

Place the zucchini shells in a shallow plate or dish with lemon juice and oil to marinate (1/8 cup water<br />

can replace oil).<br />

Grate the insides of the zucchini, carrots and beets. Mix all together and season with the remaining<br />

ingredients.<br />

Fill the shells with the grated vegetable mixture. Chill and serve.<br />

Yields 2 rectangular 12” loaves<br />

1/4 cup orange juice<br />

1 tsp Spike (or mixed spices)<br />

1/4 tsp garlic powder<br />
