2 lbs (900g) potatoes<br />

4 celery sticks<br />

1 medium onion<br />

1 lb mushrooms<br />

3 oz margarine<br />

4 tbsp soy milk<br />

2 crushed garlic cloves<br />

1 1/2 tbsp arrowroot<br />

1/3 pint (200ml) soy milk<br />

2 tbsp chopped parsley<br />

1 tsp dried thyme<br />

2 tsp lemon juice<br />

salt and pepper to taste<br />

Cook the potatoes in boiling water until tender. Grate the celery, chop the onion and mushrooms. Drain<br />

the potatoes, add 1oz of margarine and 4 tbsp soy milk to the potato pan and mash until creamy. Season<br />

well.<br />

Melt the remaining margarine in a large saucepan. Add the celery and onion and cook gently until the<br />

onion is transparent. Add the mushrooms and garlic and cook, stirring occasionally for 5 minutes. Blend<br />

the arrowroot with a little of the soymilk, stir in remaining soymilk and stir into the mushrooms. Add the<br />

parsley, thyme and lemon juice and season to taste. Simmer gently for 5 minutes. Turn the mixture into an<br />

ovenproof serving dish. Top with the mashed potato and place under a hot grill until heated through and<br />

golden or place in an oven at 190C for about 20 minutes.<br />
