3 tbsp soy sauce<br />

2 tbsp unrefined sugar or syrup sweetener<br />

2 cups potatoes, cubed<br />

2 carrots cut into 1/4 inch slices<br />

meat subsitute such as 1 cup TVP, 1 cup seitan, 1 package smoked tofu, 5 or 6 veggie hot dogs etc<br />

1/2 cup soymilk<br />

1 cup broccoli florets or string beans<br />

1 cup corn kernels (optional)<br />

Heat the oil in a heavy bottomed 3-quart saucepan. Add the onions and garlic, cover and sauté, stirring<br />

occasionally, until the onions are translucent and soft. Add the curry powder and sauté for a couple of<br />

minutes. Add the flour and cook for another two minutes. Pour in the stock and whisk until smooth. Add<br />

the apple, soy sauce, sweetener, potatoes, carrots and meat substitute of choice, cover and simmer for<br />

15 minutes. add the soymilk, broccoli and corn, and cook for another 10 minutes or so until tender. Add<br />

more soy sauce, curry powder or stock to taste. To serve, pour a generous amount of rice on a plate.<br />
